A breakfast treat - American style pancakes

I first made these for my family whilst I was on holiday in the lake district, ever since then my 3yo has been pestering me to make them every other day. They do make for a great treat to start the day and on a special occasion why not? They only take minuets to make and you don’t have to be Gordon Ramsey to get it right.
200g plain flour
300ml milk
1 large egg
1tsp baking powder
75g sugar
Mix all your ingredients in a large bowl with a whisk to ensure that you have got all the lumps of flour out. To cook them use a good quality non stick pan and you will only need the smallest amount oil. Place the frying pan on a medium heat and allow it to come up to temperature. Dip some kitchen roll into a cup of vegetable oil and coat the pan with the oil from the paper (this will be all the oil you need to stop the pancakes sticking). Take a ladle of batter and pour it in the pan, cook for 2 minuets on each side, until golden brown. When you take the pancake out of the pan re-oil the pan using the oil coated paper towel and start the next pancake.
I like to serve mine with fresh berries and maple syrup.
