Summer pleasures - strawberry mojito

Sometimes writing this blog is a real hardship and today is one of those days!!!! The sun is shining, british strawberries are just coming into season and its my day off work. What more could I possibly do but sit in the back garden and enjoy a strawberry mojito, full of fresh mint, lime, the best strawberries in the world and of cause a couple of big shots of Bacardi rum. Yes life is hard, sometimes!!!!

for a good sized glass

10 mint leaves

1 tsp brown sugar

¼ lime

5 strawberries

50ml bacardi rum

Take the mint leaves and the sugar and put them in the bottom of the glass, then using the bottom of a rolling pin mash the sugar and mint together until all of the mint juices have come out, add in the strawberries and lime and give it another mash. Pour the rum in and give it a little mix, top the glass up crushed ice and a little sparkling water. Sit back and enjoy.
