Sticky, sweet and spicy - Bar-B-Que Baby Back Ribs

When it comes to meat I know a thing or two about how to bring the best out of most cuts and ribs are no exception.

My homemade BBQ sauce not only helps to tenderize the meat but really emphasizes the flavour of the pork. Some of the ingredients that I use to make this recipe are a little out of the ordinary, but trust me when I say that they taste amazing.

2kg pork ribs

250ml ketchup

250ml pineapple juice

200g dark muscovado sugar

2 red chillies

50g fresh peeled ginger

2 cloves of garlic

1 tsp smoked paprika

½ tsp fennel seeds

Take the pork ribs and set them in a deep baking tray with 2 cm of water in the bottom.

Place all of the remaining ingredients in a liquidizer and blend until smooth. Generously smoother the ribs with ¼ of the mixture and cover the baking tray with tin foil and bake in a pre heated oven at 150c for 2.5 hours. Every 20 minutes during the bake take the tin foil off and brush with more sauce over the top of the ribs.

After the 2.5 hours are over remove the tin foil and bake for a further 30 minutes. You will end up with the most beautifully tender, sticky and spicy ribs, just perfect with a cold beer whilst watching the euro 2016 football.
