Goats cheese, beetroot and orange salad

Now that John Lewis have got their Christmas advert playing on repeat on every channel on the television it can only mean that the festive season is upon us.

With Christmas on the mind many people will be planning parties to catch up with all the friend and family to share a drink or two and wish each other the best for the festive season.

The easiest way to cater for these parties and still enjoy them your self is to do all the hard work in advance and put on a buffet. This salad is perfect addition of any hosts repertoire.

The contrast in flavours, colours and textures make for a wonderful vibrant salad, with earthy beetroot, sharp orange and creamy goats cheese this dish is sure to impress.

2 medium oranges

200g cooked beetroot

300g goats cheese log

1 bag of mixed leaf

100g cherry tomatoes halved

1 red onion finely sliced

20g sunflower seeds

75ml extra virgin olive oil

Zest the 2 oranges first and place the zest in a small bowl ready to make the dressing for this salad.

Then peel and segment the oranges, set the segments to one side and take what is left of the orange and give it a good squeeze over the bowl of orange zest and whisk in the olive oil to make the dressing for the salad.

Cut the beetroot into wedges. Place the bag of mixed leaf in the bowl and scatter the cherry tomatoes, red onion and beetroot over the lettuce. Trim the rind off the goats cheese and crumble it over the top of the salad.

To finish off the salad drizzle the dressing over and scatter the sunflower seeds on top.
