Blueberry pancakes with strawberry compote - the perfect start to the perfect day

My son is amazing, or at least I think so. He has the most amazing memory, he is only 3 and a half and the other day we were on our way to feed the squirrels in the local park when he jumped off his scooter and began to push it, telling me the hill was too big to scoot up, to which I replied “There is no hill, it’s as flat as a pancake”. To which he responded, “Do you remember when you thew the pancake in the air and it landed on your head.” Now this conversation took place on a sunny June day, we last had pancakes on Pancake Tuesday, that was way back in February, almost 5 months ago. Five months is a very long time to a boy that is only 3 and a half, so me flipping a pancake and having it land on my head must have made a real impression on him. We spent the next 2 hours walking round the park talking about making pancake on our next day off together. So with American independence day coming up this week this is what we ended up making, blueberry filled american style pancakes, topped off with a simple strawberry compote. The only problem with this recipe is you have to make twice as much as you need, or at least you do when you have a three year old in the house, the reason is simple, you have to spend half of the time tossing them as high as possible in the air causing at least half of your mix to end up on the floor next to a small child doubled up in fits of laughter. That alone make this breakfast the perfect start to a day off with your loved ones, the added benefit is that it tastes amazing.

150g blueberries

150g strawberries

100g sugar

Make your pancake batter and add in the blueberries, and fry a small ladle of batter in a dry pan on a medium heat for 3 minutes each side. Place the strawberries in a pan with the sugar and heat on a medium to high heat for 5 minutes and simply pour them over the top of your pancakes!!! Yum!!!
