Basil Pesto - The ultimate flavour maker

If there is one thing that I always keep in my fridge it is this, a jar of homemade pesto.

If you ever need to add a massive great whack of flavour into food this is one store cupboard ingredient that is sure to hit the spot. A spoon full will transform a soup, bolognese or any bowl of pasta from the mundane to the extraordinary.

It is one of the most simple of recipes that can make one of the biggest differences to your food.

I used mine today to make a swirl of flavour in an ordinary white loaf and to finish off a simple tomato soup.

100g basil

3 cloves of garlic

25g grated Parmesan

20g toasted pinenuts

100ml extra virgin olive oil

There is very little that need to doing to make this recipe work other than placing everything in a blender giving it a wizz and seasoning it. Once its done you can then keep it in a jar in your fridge for a couple of week , but I doubt it will last that long as I sure you will start putting on just about everything.
